After reading the New York Times this morning it appears that I do love me some glutamate, which is apparently the chemical behind the flavor now known as umami. This article lists a variety of favorite international sources of glutamate (and sometimes MSG). My favorites?
  • Marmite
  • Ramen noodles
  • Doritos
  • Pad kee mao
  • Goldfish crackers
In other words, most of my favorite sort-of-salty flavors all come down to this same flavor profile that we didn't learn about in elementary school. Yum.
